It is now made at the La Roca distillery (NOM 1646) from agave about eight years old, grown without chemicals in volcanic soil. The agave is cooked in brick ovens, distilled twice in a copper pot still and rested two to three months in stainless steel.\u003c\/p\u003e\n\u003cp\u003eExpect baked agave and ripe fruit with hints of herbs and minerals.
