The agave is cooked about 28 hours in brick ovens, crushed by \"Felipestein,\" a mechanical tahona, fermented with the family's yeast and distilled twice in copper pot stills using a mix of rainwater and spring water. It is aged about six months in used George Dickel whisky barrels.\u003c\/p\u003e\n\u003cp\u003eExpect tropical fruit, dried herbs and fresh agave, with a very light barrel touch. Wine Enthusiast (Kara Newman), VinePair (Tim McKirdy) and the Beverage Testing Institute all give it 94 points.
