The agave is slow-cooked in a low-pressure autoclave, crushed with a roller mill, fermented with a special yeast and distilled twice in copper pot stills, then bottled unfiltered. Mijenta says it uses only agave, water and yeast, and the company is a certified B Corp.\u003c\/p\u003e\n\u003cp\u003eMijenta describes cooked agave, vanilla, caramel, cantaloupe and peach, with fresh fruit and cinnamon on the palate.
