It is made at Los Alambiques (NOM 1474) from overripe agave cooked 48 hours in brick ovens, crushed with a roller mill, fermented with wild yeast in wooden vats and distilled twice in copper pot stills. The extra añejo is aged three years in ex-American whiskey barrels that have already held tequila several times. Heaven Hill, the importer, says it contains only agave, water and wild yeast.

Ocho's extra añejo typically shows cherry, dark chocolate, salted caramel and prune, then cooked agave, coffee, caramel, honey and orange peel; each field and year varies a little.

It is a rare chance to taste one field and one year in an extra añejo; for the younger style see Tequila Ocho Reposado.

Sip it neat.

Shop more Tequila Ocho, añejo and extra añejo tequila, additive-free tequila, collector bottles and all tequila and mezcal, with Brooklyn pickup and same-day delivery across NYC.

//cdn.shopify.com/s/files/1/0567/4893/3292/files/tequila-ocho-single-estate-extra-anejo-la-estancia-2022-750ml.webp?v=1791893596
