Every bottle of Aviation Gin is handcrafted by distillers Christian Krogstad and Andrew Tice, using the following painstaking process. We begin with only the purest neutral grain spirit, combined with botanicals sourced for us by friends at the Oregon Spice Company, who cover the globe to help us deliver Aviation's consistently distinctive flavor. Once the botanicals have been tested for quality and precisely measured, they are blended and added to a specially made cloth sack, which is placed in a large steel container of our neutral grain spirit. At this point, in essence, we are making a very strong and extremely full-flavored tea. After soaking for a period of time, the infused spirit is pumped into our 400 gallon stainless steel still where steam jackets heat the fluid up to nearly 173 degrees Fahrenheit, at which point the gin begins to evaporate, separating itself from all other fluid components. In a meticulous and constantly monitored process, the first fluid leaving the still, known as the 'heads', is carefully removed. This reveals the 'heart of the spirit' - the only portion good enough to cross the palate. Nearing the end of the distillation cycle, fluid now known as the 'tails' becomes dilute and is redirected away. Once the 'heart cut' has been captured, we add absolutely pure water to bring Aviation to a fully-flavored and very drinkable 84 proof. It is then allowed to rest for a few days, encouraging the flavors to completely intermingle. Bottling takes place not 20 yards away from the still. The cap is secured, the label carefully placed, and Aviation Gin is ready for shipment to your favorite watering hole.
