Sea Smoke Pinot Noir Ten 2021 750ml

Our winemaking journey starts with a careful hand-harvesting of the grape clusters, followed by meticulous sorting right in the vineyard. Post this, a gentle destemming process takes place after spending an evening in our cold room to ensure optimal conditions. During sorting, a keen eye is kept to remove any unwanted 'jack stems.' The resulting musts undergo a cold soak in open-top fermenters for five days and are then inoculated with specially cultured yeasts to initiate a gradual fermentation. To ensure the finest quality, each tank undergoes manual punching down twice a day, allowing for a maceration period ranging from sixteen to twenty-eight days. Following the completion of primary fermentation and maceration, the free-run wine is delicately transferred to tanks for settling and is then pressed at an incredibly low pressure (0.08 bars) to prevent any bitter extraction. After an overnight settling, both the free-run and pressed wines find their way to barrels. Notably, the wine labeled 'Ten' is bottled without any fining or filtration to preserve its unique character. The resulting wine embodies a brooding and intense character. The aromatic journey begins with enticing notes of ground cacao, raspberry, and Friar plum, followed by an enticing blend of spices and a subtle lavender hint. On the palate, you'll experience firm, mature tannins, a clear indicator of Ten's potential for aging, culminating in a long, luxurious, velvety finish.
