Agave Matchmaker
"This is bottle number 87 and 40% abv. The color is very light amber, almost blanco. This is reminiscent of El Pandillo's style. It has oily legs in the glass. I expected to get a hit of alcohol in the aroma, as I just opened the bottle. Nope... just that lovely cooked agave, followed by minerality, oak, grass and a hint of cinnamon. The flavor also shows the cooked agave, black pepper spiciness, caramel, oak minerality from the water used and a hint of butter. There is a viscous mouth feel that gives a wonderful, long finish. Agave Matchmaker
"Aroma, was led with agave , pepper and citrus , then transitioned to a sweet vanilla and caramel. simple hints honey and citrus came through. Palate, cooked agave came through on the initial sample, along with pepper, and Barrel Oak. Leaving a dry mouthfeel with a slight tingle, sweetness of vanilla, cooked agave made their way to my palate. Finish, medium to long with pepper lingering on the palate, a warming affect was present throughout and hints of barrel spice were noted. Overall, it's a smooth sipper where the sweetness and pepper are balanced and the dry mouth feel faded leaving a creamy sweet palate from the honey and vanilla. Carlos Suarez" |
