Chandon is the California sparkling house of Moët Hennessy, the group behind Moët & Chandon in Champagne.
The current release is 57% Chardonnay, 40% Pinot Noir and 3% Meunier from several cool-climate Northern California appellations, picked at night from early August. It's made by the traditional method, with the second fermentation in bottle and at least 12 months on the lees. It's a Brut with 9.5 g/L of residual sugar, and 12% alcohol. The blend shifts from release to release.
The winery describes strawberry, red cherry, raspberry and red currant with brioche, floral, toasty and mineral touches, and "vivacious red fruit flavors with creamy smoothness."
Against Veuve du Vernay Brut Rosé, Chandon costs more but is bottle-fermented with at least a year on the lees; for a rosé with brioche depth, choose Chandon.
The winery suggests serving it at 49 to 54°F with burgers, paella, smoked salmon, gumbo or duck-fat fries. For brunch, its Chandon Mirosa mixes 3 oz of the rosé with 3 oz of pink grapefruit juice.
