Gyeongju Beopju Ssal Makgeolli comes from Gyeongju Beopju Co., Ltd., a brewery in Gyeongju, North Gyeongsang province, South Korea, and a subsidiary of the Geumbokju group. It launched this rice makgeolli in June 2012.
Makgeolli is a cloudy Korean rice wine fermented with nuruk, a traditional grain starter. This one uses only domestic Korean rice, polished to 20%, with the brewery's own nuruk and water from Mt. Tohamsan. It is 6% alcohol with a 12-month shelf life, far longer than fresh, refrigerated makgeolli.
The brewery emphasizes ingredients rather than tasting notes: a straightforward, rice-only makgeolli at a classic everyday strength.
Against Kooksoondang Makgeolli, also 6% and 750ml, Gyeongju Beopju keeps to rice and house nuruk and stays good for a year; for a makgeolli to keep on hand for the next party, choose Gyeongju Beopju.
Keep it cold and serve it chilled. The rice sediment settles, so turn or shake the bottle gently before opening, then open it slowly. Pour it alongside pajeon, kimchi or fried chicken.
