Hakutsuru Plum Wine comes from Hakutsuru Sake Brewing, founded in 1743 in the Nada district of Kobe, Hyogo Prefecture. Its importer, SakéOne, calls Hakutsuru Japan's number-one-selling sake brand, and its brewmasters follow the Tanba Toji lineage. SakéOne, based in Forest Grove, Oregon, is the exclusive US importer.
This is an umeshu-style plum wine. The base is Japanese domestic ume plums rather than grapes or rice, made with Nada spring water drawn from Mount Rokko and fermented with wine yeast OC-2. It is semi-sweet and 12.5% alcohol.
The importer describes a fruity plum aroma and a semi-sweet, bright, tangy and slightly tart palate. Tippsy Sake adds a well-matured plum aroma.
Against Shinsei Yuzu Omoi, Hakutsuru Plum Wine is fuller in alcohol and costs about half as much; for an everyday chilled plum aperitif under $20, choose Hakutsuru.
Serve it chilled. The importer pairs it with desserts and with pungent, creamy cheeses such as Roquefort or Stilton, and Tippsy suggests pouring it as an aperitif or a dessert wine. It also works over ice.
