Peychaud's Bitters go back to Antoine Amédée Peychaud, a Creole apothecary who sold his own bitters from a pharmacy on Royal Street in New Orleans in the 1830s. Today they are made by the Sazerac Company and bottled at 35%.
They are bright red, lighter and fruitier than Angostura, with anise, cherry and orange peel over a gentle bitterness.
For a Sazerac, Peychaud's is essential, and there is no substitute; for a classic aromatic bitters for Manhattans, choose Angostura Aromatic Bitters. For orange bitters from the same maker, see Regans' Orange Bitters.
For a Sazerac, stir rye whiskey or cognac with a sugar cube and a few dashes of Peychaud's, strain into a glass rinsed with absinthe, and finish with a lemon twist. It also brightens a Vieux Carré or a glass of sparkling wine.
The Sazerac is the official cocktail of New Orleans. More bar staples are under mixers and bitters, and the rest of our liquor is a click away. Pick it up at our Brooklyn store or get same-day delivery across NYC.
