Sea Smoke Pinot Noir Southing 2021 750ml

The grapes for this wine were meticulously hand-harvested and carefully sorted right in the vineyard. Following a stint in our cold room, they were gently destemmed, ensuring the removal of any unwanted elements. During the sorting process, we took great care to eliminate any undesirable "jack stems". The musts were then cold soaked in open-top fermenters for five days and later inoculated with specially cultured yeasts to initiate a gradual fermentation process. Manual punch-downs were performed twice a day for each tank, allowing for a maceration period lasting from sixteen to twenty-eight days. After the primary fermentation and maceration phases were successfully completed, all the free-run wine underwent a transfer to tanks for settling, followed by a gentle pressing at remarkably low pressure (0.08 bars) to prevent the extraction of bitterness. Following an overnight settling, both the free-run and pressed wines were carefully racked to barrels. The wine labeled as "Ten" was bottled without any fining or filtration, preserving its intrinsic character. Wine Characteristics: This wine possesses a brooding and intense character. The aromatic profile initiates with captivating notes of ground cacao, raspberry, and Friar plum, intertwined with a medley of spices and a subtle hint of lavender. The palate is greeted by firm, mature tannins, a testament to Ten's potential for aging, culminating in a long, luxurious, velvety finish.
