Virgil Kaine Ribbon Rail Straight Rye Whiskey 750ml

Virgil Kaine is a Charleston, South Carolina, whiskey company started by chefs, and Ribbon Rail is its rye blend made with Revelry Brewing, also of Charleston.

It joins three straight ryes: a five-year-old rye, a four-year-old double-barrelled rye, and a rye double-barrelled in casks that had held Revelry's chocolate malt porter. That last one is where the character comes from. Cedar, almond and toasted coconut on the nose, then a nutty palate with mocha, oak, a little pineapple and chamomile, ending with a ginger bite. It's bottled at 99.2 proof.

Pick it for an Old Fashioned with chocolate or coffee bitters; the porter barrel meets them halfway. For a more classic rye, try Knob Creek 7 Year.

Neat, it opens up after a few minutes in the glass. Serve it with dark chocolate, or alongside a stout.
