The 2022 growing season began with a challenging frost, but the varied vineyard locations and elevations allowed ROCO to produce an exceptional vintage. Warm summer days and cool nights led to ripe fruit with natural acidity, creating a balanced and dynamic wine.
Hand-harvested fruit was chilled overnight, whole-berry de-stemmed, and fermented in open-top tanks with native house-cultured yeasts. After an extended soak, the wine was pressed and completed malolactic fermentation before aging in a mix of new to neutral French oak barrels for nine months.
Inviting aromas of allspice, dried cherry, blackberry, Turkish fig, and a hint of maple syrup lead into a palate layered with dark fruit and spice. Notes of white pepper, Sichuan peppercorn, and cassia bark add savory complexity, while supple tannins and fresh acidity carry the wine to a graceful, lingering finish.
An ideal companion for roasted duck, grilled pork with herbs, mushroom risotto, or cedar-plank salmon. It also pairs beautifully with charcuterie and aged cheeses. Serve slightly chilled (55–60°F) to let its aromatics shine.
