Alto Canto Reposado is a 100% organic blue Weber agave tequila from the Sierra del Tigre mountains of Jalisco, Mexico, bottled at 40% alcohol in a 750ml bottle.
It is made at Tequila El Rocío (NOM 1636), a single-brand estate distillery at about 9,000 feet, founded by Daday Suárez with maestro tequilero Juan Reyes. The agave is cooked 72 hours in brick ovens, crushed with a stone tahona, fermented about 80 hours with wild yeast and the fibers in open wooden vats, and distilled twice in copper pot stills. It rests four months in new American oak in an adobe cellar.
The importer, Skurnik, notes tangerine, candied orange peel, salted caramel and crème brûlée, and lists it as USDA organic, kosher and additive-free. Wine Enthusiast (Kara Newman) gives it 89 points for its flinty, floral nose and lychee, toasted coconut and guava.
Tahona crushing, wild fermentation and organic estate agave make it one of the most traditional reposados we carry.
