Sake is Japan's brewed rice wine, and the label tells you a lot about the style. Junmai is made from rice, water, yeast and koji alone and tends to be fuller and savory; Ginjo and Daiginjo use rice polished further for a lighter, more fragrant sake; Honjozo adds a touch of distilled alcohol for a crisp, dry finish; and Nigori is cloudy, creamy and slightly sweet. Our shelf runs from everyday Junmai by Ozeki, Hakutsuru and Hakushika to the Dassai Junmai Daiginjo range, plus Nigori from Sho Chiku Bai and Brooklyn Kura and Yuzu Omoi citrus sake. Brands and bottlings can change, so check what is showing on the page.
Serve Ginjo and Daiginjo chilled, in a wine glass to catch the aroma. Fuller Junmai and Honjozo also work at room temperature or gently warmed, and go well with grilled fish, yakitori, ramen and sushi. Keep opened sake in the fridge and finish it within a week or two.
