Sho Chiku Bai Nigori Sake Unfiltered is a cloudy, creamy sake brewed by Takara Sake USA in Berkeley, California, at 15% alcohol. Takara says it was the first nigori made in America, released in 1984.
Nigori means cloudy: the sake is only coarsely filtered, so fine rice solids stay in the bottle and give it a milky look and a soft, textured feel.
Expect pleasant sweetness, rice and cream, with a light, smooth finish. It is an easy first sake for people who like something gentle and a little sweet.
Shake the bottle before each pour and serve it well chilled. It works with spicy dishes, Thai and Korean food, cheese and fruit desserts, or in simple sake cocktails.
If you prefer a drier, clearer sake, try a junmai or ginjo next; if you like this one, look at other nigori such as Brooklyn Kura's Lake Effect.
