Kuromatsu Hakushika is made by Tatsuuma-Honke Brewing, the owner of the Hakushika brand, founded in 1662 by Kichizaemon Tatsuuma in Nishinomiya, in the Nada district of Hyogo between Osaka and Kobe. By 1889 it was Japan's largest sake producer, and in the late 1920s its top sake went on sale nationwide, in glass bottles, as Kuromatsu Hakushika. The brewery has exported to the US since the 1950s.
This is a Junmai, with the rice polished to 70%. The brewery lists a Sake Meter Value of +2, which it calls mildly dry, and 14.5% alcohol.
The brewery describes it as mellow, fresh and versatile, a traditional favorite.
Against Hakutsuru Organic Junmai, Kuromatsu Hakushika is the lower-priced everyday Junmai from Nada; for a mildly dry sake under $15 to drink at any temperature, choose Kuromatsu.
The brewery recommends it chilled, at room temperature or warmed, and pairs it with sushi, teriyaki, tempura, tonkatsu and yakitori. It also suggests it for cocktails and cooking.
