The Soldier Cabernet Sauvignon 2021 is a dry red wine from the Columbia Valley in Washington State, bottled at 14.5% alcohol under a screw cap.
It is made by King Estate, the Oregon winery, from Columbia Valley vineyards. The grapes are cold-soaked for 48 hours, fermented in open-top stainless steel tanks with extended maceration, then aged 24 months in French and American oak, 36% new.
Expect marionberry and boysenberry with lilac, rose, anise, cedar and tobacco, then a succulent palate with silky tannins and a soft, velvety finish. Wine Enthusiast (Michael Alberty) gives it 89 points, noting black cherry, lavender and dark chocolate with plush tannins and a creamy texture.
For a Cabernet with two years in oak, it is an easy everyday price, and a good alternative to a pricier Napa bottle for a weeknight steak.
Serve it with roast beef, grilled steak, burgers, short ribs or aged cheeses.

"The Soldier marches on aromas and flavors of black cherries, lavender, cedar, bittersweet dark chocolate and a hint of tomato leaf. It also flashes a wee bit of heat from the elevated alcohol. The acidity here is modest, with plush tannins and a creamy texture. I'd happily salute a roast beef sandwich with this wine. — Michael Alberty" |
