Louis Latour Chablis La Chanfleure 2025 is a dry white Burgundy from the Chablis appellation in France, made from 100% Chardonnay and bottled in a 750ml bottle.
Maison Louis Latour has been family-owned since its founding in 1797 and is now in its eleventh generation; in 2003 it bought the Chablis house Simonnet-Febvre. La Chanfleure comes from vines averaging 30 years old on the Kimmeridgian and Portlandian limestone that gives Chablis its flinty edge. It is fermented and then aged 8 to 10 months in stainless steel, with no oak, so the fruit and minerality stay front and center.
Latour describes a bright, pale wine with green glints, floral and citrus aromas, and lemon and grapefruit on a palate that balances richness and freshness before a crisp, mineral finish.
Unoaked and crisp, it is a different style from buttery, oak-aged California Chardonnay; for another village Chablis, compare William Fèvre.
Serve it at 50–54°F with oysters, shellfish, grilled fish or charcuterie, and drink it within two to three years.
