Mary Taylor bottles wines from small growers under her own label, and this Touraine comes from Luc Poullain, who farms Domaine des Échardières in Pouillé, on the left bank of the Cher near the Château de Chenonceau.
It's Sauvignon Blanc from vines up to 70 years old, grown on sandy, siliceous clay and limestone with grass between the rows. The wine ferments in stainless steel, rests up to a year on its fine lees, and spends at least a month in bottle before release. There's no oak.
The importer calls it a grassy, citrusy expression of its terroir, nuanced and invigorating, good at the table or on its own.
It drinks like a Sancerre for less; against Paul Buisse Touraine, it has more texture from the long lees aging, so for a step up in Touraine, choose this one.
Serve it chilled with oysters, goat cheese, grilled fish or a salad with herbs.
