Ovum Big Salt White Wine 750ml

Ovum is run by John House and Ksenija in Newberg, Oregon, making aromatic, high-acid whites from Pacific Northwest vineyards with native yeast and minimal additions. Skurnik distributes it in the US.

The current 2024 Big Salt is 46% Riesling, 28% Gewürztraminer, 18% Early Muscat and 6% Pinot Blanc plus a little Pinot Gris, from 10 sustainably farmed Oregon vineyards, including own-rooted 1976 vines in Oregon City. All the juice is co-fermented in one tank with native yeast, with brief skin contact for texture, and sulfur is added only before bottling in February.

Ovum describes it, via Skurnik, as dry, aromatic and zippy, with salty lemon, ginger and aloe vera. Muscat leads when young, then Gewürztraminer, then Riesling after about a year.

Against The Vice Orange of Gewürztraminer, Big Salt is the dry, zippy blend with only brief skin contact; for a bright aromatic white rather than an orange wine, choose Big Salt.

Serve it chilled with oysters or Thai dishes.
