Toki Japanese Whisky

Toki means "time" in Japanese, and Suntory made it for the highball. It came out in the US in June 2016, a blend built on two pillars: Hakushu malt aged in American white oak and heavy-style grain whisky from Chita, tied together with Yamazaki malt from American and Spanish oak casks.

That makes it lighter and greener than Hibiki. Basil, green apple and honey on the nose; grapefruit, green grapes, peppermint and thyme on the palate; and a gently sweet, spicy finish with vanilla, white pepper and ginger. It's bottled at 43%.

Fill a tall glass with ice, add one part Toki to three or four parts very cold sparkling water, and stir once, gently, to keep the bubbles.
