Domaine William Fèvre was founded in Chablis in 1959 and farms 70 hectares, organically since 2000. This is its estate-grown village Chablis.
The grapes come from 46.8 hectares of Chardonnay on Kimmeridgian marl and clay-limestone, on both banks of the Serein. The wine ferments naturally in stainless steel after a short, gentle pressing. Only 5 to 10% spends five or six months in French oak barrels averaging six years old, so there's no new oak, and the rest ages ten to twelve months in steel. It's 12.5% alcohol.
The domaine describes a very fresh bouquet of citrus and white-fleshed fruit, and a fresh, supple palate with the mineral notes typical of Chablis. The 2022 was #65 in Wine Spectator's Top 100 of 2024.
Against Laroche Saint Martin, Fèvre is a touch richer and more structured; for a top-house village Chablis, choose Fèvre.
It drinks well now and over the next five to seven years, with grilled fish, oysters, sushi and seafood.
