Domaine Laroche was founded in Chablis in 1850, and Saint Martin is its flagship village Chablis. It's a selection of the best plots from the domaine's 60 hectares, grown on Kimmeridgian clay and limestone. The farming is sustainable and the wine is certified vegan.
For the 2024, whole bunches were gently pressed and fermented for 21 days in stainless steel plus 15% in wooden casks, with full malolactic fermentation. The wine then aged at least six months on its fine lees, 85% in steel and 15% in large old foudres, so there's no new oak. Harvest began on 19 September after a wet spring and a mild summer.
Laroche describes chalk, white flowers and fresh apple, ripe white fruit, and a long, mineral finish.
Against Louis Jadot Mâcon-Villages, Saint Martin is leaner and more mineral; for oysters or a classic Chablis, choose Laroche.
Serve it chilled with oysters, sushi, goat cheese or grilled white fish.
