Hérisson is made by Domaine de Rochebin, a family estate in Azé, in the Mâconnais, founded in 1925. Mickaël Marillier, the third generation, runs it, and the US importer is Communal Brands.
It's Bourgogne Passe-Tout-Grains, Burgundy's traditional blend of Gamay and Pinot Noir. The grapes come from hillside vines on limestone and clay and are picked by hand. They're fully destemmed, fermented for a week in temperature-controlled steel, then kept five months in cement. There's no oak, and the importer lists it as vegan.
The importer's notes call it red-berried, playful and juicy. It's light, at 12% alcohol.
Against Louis Jadot Beaujolais-Villages, Hérisson adds Pinot Noir and comes in a box that holds four bottles; for a party or a week of glasses, choose Hérisson.
The importer says the box stays fresh for 30 days after opening. Keep it a little cool and pour it with charcuterie, roast chicken, burgers or a cheese board.
