Viña Santiago Queirolo is one of Peru's oldest wine and pisco houses. Its founder, Santiago Queirolo Raggio, an Italian immigrant, began making wine in 1880, starting from a tavern in Pueblo Libre, Lima. Production later moved to Cañete, south of Lima, and the winery now owns more than 800 hectares of vineyards for wine and pisco.
The producer calls this wine Gran Borgoña, lists its grape simply as Borgoña, and gives its origin as Cañete, Ica. It's a semi-dry red, with its sweetness balanced by acidity, made in the style of Peru's classic semi-sweet table reds.
Santiago Queirolo describes it as light violet in color, with red berries, raspberry and a delicate fig note, and calls it fruity and refreshing.
Against Stella Rosa Red, Queirolo is the traditional Peruvian semi-dry table red; for a taste of Peru's classic Borgoña, choose Queirolo.
The producer suggests serving it at about 64 °F (18 °C). Its light fruit and touch of sweetness suit grilled chicken, empanadas, a cheese board or a relaxed weeknight dinner.
