Textbook is a Napa company, but this Cabernet comes from Paso Robles, blended from four of its sub-districts: Estrella, El Pomar, Geneseo and San Miguel. That spread is what keeps it balanced.
Jonathan and Susan Pey founded Textbook, and Abi Horstman Estrada makes the wine. The 2023 is 95% Cabernet Sauvignon and 5% Petite Sirah. It fermented for seven days in stainless steel and then spent 14 months in French oak, 30% of it new. A wet winter, cool spring and long season kept the acidity up. It's 13.9% alcohol.
The winery describes Satsuma plum, red currant, anise and baking spice, then juicy black cherry, raspberry and milk chocolate, with a smooth finish and integrated tannins.
It's fresher than most Paso Cabs. If you find Daou too rich, this is the one to try.
Serve it just below room temperature with a steak or a mushroom dish.
