Daou Cabernet Sauvignon Paso Robles 2023 750ml

Brothers Georges and Daniel Daou built their winery on a hilltop in the Adelaida District of Paso Robles, at about 2,200 feet, on calcareous clay soils. This is their flagship everyday Cabernet.

The estate covers 212 acres, and Treasury Wine Estates bought the business in 2023 for up to $1 billion. The 2023 is 14.5% alcohol; Daou doesn't publish its blend or oak regime.

The winery describes cherry, blackberry jam, dark chocolate and tobacco, with wet gravel and sandalwood, then black raspberry, pomegranate and cherry preserve on the palate. The finish brings boysenberry, graphite and dried thyme.

It's riper and rounder than most Napa Cabs at this price. If you're choosing between Paso Cabs, Daou is the bolder one; Justin is a little lighter and more savory.

Serve it a few degrees below room temperature. Burgers, ribs and tri-tip are the obvious matches.
