Justin Baldwin planted his first vineyard in Paso Robles in 1981, and the Justin estate now covers 2,100 acres. This is the winery's core Cabernet, below its Isosceles blend and the Reserve.
Scott Shirley is the winemaker. For the 2022, the grapes were hand-picked and sorted berry by berry, fermented in open- and closed-top stainless steel tanks, and aged 14 months in small barrels, 25% of them new American oak. It's 14.5% alcohol.
The winery describes raspberry, black cherry, vanilla, soft herbs and warm spice, then a supple palate with plum, ripe cherry, caramel, toasted coconut, fennel and sage. The tannins are velvety and the finish savory, with a hint of pepper.
Justin is the more savory, herbal Paso Cab. If you want richer and riper, choose Daou.
It's ready on release. The winery suggests grilled chicken, burgers or filet mignon.
