Lise and Bertrand Jousset are growers in Montlouis-sur-Loire, in the Loire Valley. Retailers including Astor Wines and Leon & Son describe their farming as organic and biodynamic.
Exilé is a pétillant naturel, made by the méthode ancestrale: the wine is bottled before its first fermentation finishes, so the bubbles come from that single fermentation, with native yeasts. Retailers list Gamay and Grolleau, though the blend varies by vintage. Importer notes on Buvons describe 80% steel and 20% neutral 400-liter barrels, six months in bottle, no fining or filtering and no added sulfur. It's labeled Vin de France, at 10% alcohol.
Retailers describe strawberry, red berries, blood orange, flowers and an herbal snap with brisk acidity. On sweetness they differ: Leon & Son calls it dry, Astor a touch off-dry.
Against Thierry Germain Bulles de Roche, Exilé is the pink, low-intervention pét-nat; for an easy rosé fizz, choose Exilé.
Serve it well chilled and open it carefully. Try it with charcuterie, goat cheese or a picnic spread.
