Ozeki Classic Premium Junmai is brewed in Hollister, California, by Ozeki Sake (U.S.A.). The parent brewery was founded in 1711 by Ozakaya Chobei in the Nada district of Hyogo, Japan. In 1979 Ozeki opened its Hollister brewery, which it calls the first presence of a Japanese sake producer in the USA, and this was one of the three sakes first brewed there.
It's a Junmai, so no distilled alcohol is added, with the rice polished to 70%. Ozeki lists an SMV of +4 and acidity of 1.6, and it's 14.5% alcohol.
Ozeki describes it as slightly dry with a rounded, clean flavor, earthy, rich and full-bodied. The brewery adds that it has long been the warm house sake at Japanese restaurants across the US.
Against Ozeki Classic Dry Junmai, Premium Junmai is the rounder, fuller-bodied pick and works warm; for heated sake at home, choose Premium Junmai.
Ozeki rates it best chilled at 40 to 50°F or warmed to 95 to 105°F. The brewery suggests grilled chicken, sashimi and barbecue.
