The Nicolis family has made wine since 1951 in San Pietro in Cariano, at the heart of Valpolicella Classica, and three generations have now worked the estate, farming 49 hectares without herbicides, pesticides or lab yeasts.
This Amarone della Valpolicella Classico DOCG starts with Corvina, Rondinella, Croatina and Molinara. The grapes dry for three months in a fruttaio, then ferment spontaneously with native yeasts in steel for 25 days during the winter. The wine ages 30 months in large Slavonian oak barrels and six more in bottle, a traditional approach rather than small barriques.
It's a deep ruby, with dried fruit, jam, underbrush, walnut husk and leather: balanced, rich, austere and long.
Against Cesari Amarone Classico, Nicolis is the more traditional, austere style from native yeasts and long large-cask aging; for a classic, savory Amarone, choose Nicolis.
Open it at least an hour ahead and serve it with braised meat, roast duck, osso buco or aged cheese.
