Chivas Regal 12 Year Blended Scotch Whisky

Chivas Regal goes back to a grocer's shop in Aberdeen, where the Chivas brothers began blending whisky for their customers in the 19th century. The 12 Year is the house's best-known bottle, and its heart is Strathisla, the Speyside malt distillery Chivas Brothers calls home.

Every whisky in it has spent at least 12 years in oak. It's a soft, honeyed blend: baked apple, honey and dried apricot, with cinnamon, clove and vanilla custard showing once you add a drop of water. It's bottled at 40%.

Choose it over Black Label if you prefer fruit to smoke. For the same house with a richer Cognac-cask finish, there's Chivas Regal XV.

It's an ideal Scotch for a Penicillin: shake 2oz with 3/4oz lemon juice and 3/4oz honey-ginger syrup, then float a little smoky Islay malt on top.
