On 5 March 2007, Lucid became the first absinthe approved for sale in the US since the ban of 1912. Ted Breaux created it, and it is distilled at the Combier distillery in the Loire Valley from grande wormwood, green anise and sweet fennel, then bottled at 62%.
It is light straw in the glass and louches to a bright opal with water. The flavor is mild and herbal: fennel, lime peel, a fresh hint of celery and a faint sweetness at the edges.
Lucid is the gentler, more cocktail-friendly absinthe; Pernod Absinthe is spicier and stronger. Buy Lucid for a Sazerac rinse, a Corpse Reviver No. 2 or a first try at the water ritual. The 375ml bottle lasts, since a rinse takes only a few drops.
For the classic drip, add cold water slowly to an ounce of Lucid, with a sugar cube if you like, until it turns cloudy. For the Sazerac, rinse the glass and build it with rye; for the Corpse Reviver, use gin.
