The producer still runs historic wooden stills, including a wooden Coffey still in use since 1880, and the 12 Year draws mainly on its wooden and metal Coffey stills rather than the famous wooden pot stills.
It is round and dry, with chocolate, cherry, baked orange, cinnamon and a toasted marshmallow sweetness.
Next to Ron Zacapa 23, El Dorado 12 is drier and less sweet, and it costs less. For more age from the same distillery, step up to El Dorado 15.
The producer's recommended serve is a Rum Old Fashioned: two ounces of rum stirred with a sugar cube soaked in bitters, finished with orange. It is just as good neat.
