El Dorado 3 Year Rum 750ml

El Dorado 3 Year is a white rum from Demerara Distillers in Guyana. It is aged three years in ex-bourbon barrels, then double filtered through natural charcoal to remove the color. It is distilled from molasses in the French Savalle column still, which came to Diamond from the old Uitvlugt estate, and bottled at 40%.

It is mild and smooth, with powdered sugar, plantain, cashew brittle and caramel, and a fruity, dry finish.

For under $20, it is a white rum with more character than Bacardi Superior, thanks to the time in barrel. For an older El Dorado to sip, try El Dorado 12.

It is made for mixing: a Cuba Libre with cola and lime, a fruit-forward Daiquiri, or a Mojito with fresh mint, lime and soda over crushed ice.
