Mathilde Cassis is made by Maison Ferrand, the Cognac house behind Pierre Ferrand, from blackcurrants, and bottled at 16%. It is plush and velvety, the kind of crème de cassis built for a Kir.
The nose is blackberry compote; the palate is sweet and coating, with blackcurrant, Concord grape, black cherry and prune, and a long finish with a brush of vanilla.
This is the bottle for a Kir or a Kir Royale. A cheap cassis tastes like syrup; this one tastes of dark fruit and carries a glass of wine without flattening it.
Pour half an ounce into a glass and top with dry white wine for a Kir, or with sparkling wine for a Kir Royale. It also adds color and depth to a gin fizz or a vodka tonic.
More from the same house: Mathilde Poire and Mathilde Pêche, and the rest of our liqueurs and cordials. Pick it up at our Brooklyn store or get same-day delivery across NYC.
