Paul Ricard created his pastis in Marseille in 1932, flavoring it with anise, licorice root, fennel and Provençal herbs, and it is bottled at a full 45%.
Neat it is intense. With water it clouds to a pale yellow and opens up: anise first, then herbs, pepper and a little caramel, finishing smooth and clean. That clouding is the oils of the anise coming out of solution.
If you are choosing between the two French anise bottles we carry, Pernod Anise and Ricard, buy Ricard for the classic glass of pastis with water on a warm afternoon.
The traditional pour is one part Ricard to five parts cold water. Add the water first and the ice after, so the anise stays smooth.
More aperitifs are on our vermouth and aperitif page, and the rest of the shelf is under liqueurs and cordials. Pick it up at our Brooklyn store or get same-day delivery across NYC.
