St-Germain only gets one harvest a year. The elderflowers are picked by hand in late spring in the foothills of the French Alps, when they are at their most fragrant, and the brand says up to 1,000 blossoms go into a single bottle. It launched in 2007 as the first elderflower liqueur of its kind and quickly became a bar staple.
It tastes of the flower itself, with pear, lychee and a squeeze of grapefruit, and it is softer than you think at 20% alcohol.
For a spritz where elderflower is the whole point, buy St-Germain. If you are mixing a big bowl of punch and it is one ingredient among many, a less expensive elderflower liqueur will do.
The house serve is two parts dry sparkling wine, one part St-Germain and two parts soda, over ice. A splash in a gin and tonic works just as well.
