The 'House' Sauvignon Blanc has been meticulously fashioned, drawing inspiration from the esteemed traditions of fine white Bordeaux. Our process involved pressing the grapes in their entirety as whole clusters, followed by fermentation in neutral French oak barrels. Subsequently, the wine underwent a 5-month aging period on its lees, with weekly stirring to enhance its complexity.
This Sauvignon Blanc exudes style and elegance, captivating the senses with fragrant notes of honeysuckle, white peach, and a subtle hint of brioche. On the palate, it offers a harmonious interplay of key lime and lemon curd, intertwined with flavors of pear and yellow apple. A backdrop of spice and ginger notes adds depth, and these flavors linger into the wine's long and vibrant finish.
"Aromas of stone fruit, fresh flowers and a hint of jasmine. Medium-bodied and generous on the palate. Notes of almond and hay ground the fresh fruit."
