Ziobaffa is a partnership between filmmaker Jason Baffa and Tuscan vintner Piergiorgio Castellani, who guides production. The wine is bottled in a zero-waste facility in Tuscany.
It's a Toscana Rosso IGT made mainly from Sangiovese, with other varieties, from vineyards near the Tuscan coast. The brand describes it as organic, vegan and non-GMO, though it doesn't name a certifier. The bottle is closed with a Helix cork, which twists out and back in, and the bottle on our listing carries no vintage. It's 12.5% alcohol.
The brand calls it mild, elegant and smooth, with black cherry and blackberry and a long, juicy finish of fruit, spice and earth.
Against Zaccagnini Montepulciano, Ziobaffa is lighter and smoother; for an easy Tuscan red to chill a little in summer, choose Ziobaffa.
The brand suggests serving it at about 60°F with roasted or grilled meats, red-sauce pasta and pizza.
