Isolation Proof Original Gin

Isolation Proof Original Gin is distilled from whey, the by-product of cheesemaking, rather than grain. It comes from a small farm distillery in New York's western Catskills, started in a barn in 2020 by distiller Jake Sherry, which sources most of its ingredients in New York State.

The style sits between a London Dry and a New American gin, with juniper, organic licorice, orange peel and cubeb. The whey base gives it a soft, rounded texture.

The distillery's Martini uses 2 oz of gin, 1 oz dry vermouth, orange bitters, a pinch of salt and a lemon twist.
