Angel's Envy Cellar Collection Ice Cider Finished Rye Whiskey 107 Proof 750ml

This was the first rye in Angel's Envy's Cellar Collection: a seven-year-old, 95% rye finished for 364 days in French oak casks that had held ice cider from Eden Specialty Ciders in Vermont. It came out in February 2022, 6,000 bottles at 107 proof.

Ice cider is made from apples pressed after freezing, so it's dense and sweet, and the casks carry that into the whiskey. Caramel apple and toasted oak on the nose, with nuttiness and cinnamon. The palate is peppery and cinnamon-spiced, then vanilla, ripe apple, toffee and butterscotch, and the long finish moves from spice to brown sugar and apple.
