Bouvet Ladubay was founded in 1851 by Etienne Bouvet in Saint-Hilaire-Saint-Florent, near Saumur in the Loire Valley. The Monmousseau family took over in 1932, sold the house in 2006 and bought it back in 2015. Its cellars are carved into ancient tuffeau quarries.
Signature Brut is a cuvée made for the US market from Chenin Blanc and Chardonnay, drawn from more than 100 Loire plots; The Somm Journal lists the split as 90% and 10%. The first fermentation is in steel and the second in bottle by the traditional method, with at least nine months on the lees and a Brut dosage of 10 g/L. It's 12.5% alcohol.
Its importer, Kobrand, describes pale straw color, fine bubbles, brioche, pear and honeysuckle, and calls it an "elegant sparkling wine."
Against Henri Champliau Crémant de Bourgogne, Bouvet is Chenin-based and costs far less; for a traditional-method sparkler under $20, choose Bouvet.
Kobrand suggests it as an aperitif or with seafood and rich cheeses. Serve it well chilled.
