Cavicchioli is a Lambrusco house in Modena, in Emilia-Romagna. The family began bottling under its own name in 1928, the winemaker is Sandro Cavicchioli, and the company is now part of Cantine Riunite & CIV. Frederick Wildman imports it to the US.
The importer gives the blend as 34% Lambrusco di Sorbara, 33% Grasparossa and 33% Salamino. The wine ferments on the skins, then gets a second fermentation by the Charmat method in pressure tanks with fresh must and selected yeasts, which gives it its gentle fizz. As a Dolce it carries 50 grams per liter of residual sugar, and it's just 7.5% alcohol.
The importer describes a brilliant ruby color with a violet froth, a fruity, floral nose, and a palate that is "sweet and harmonious".
Against Lini 910 Labrusca Lambrusco Rosso, Cavicchioli costs about half as much; for a sweet, low-alcohol red sparkler, choose Cavicchioli.
Serve it well chilled. The importer suggests grilled or cured meats and spicy dishes.
