The Little Sheep of France is a Sauvignon Blanc from Loire Valley grapes, labelled Vin de France and brought in by Monsieur Touton Selection in New York.
The grapes grow on clay and flint soils over chalk. They are pressed directly, the juice settles for 12 to 24 hours, and then it ferments in temperature-controlled stainless steel. There's no oak, and the wine is bottled in late winter to keep its aromas fresh. It's sealed with a screw cap.
The importer describes an aromatic, lively wine with citrus, apple and passion fruit, a savory palate and an expressive, balanced finish.
Next to Paul Buisse Touraine, the Little Sheep is lighter and easier; for an everyday Loire-style white at a low price, choose the Little Sheep.
Serve it chilled with shellfish, salads, grilled vegetables or goat cheese. It's not the same as the lower-alcohol Little Sheep Light.
