Yola Jiménez, owner of the La Clandestina mezcal bar in Mexico City, founded the brand with Gina Correll Aglietti and singer Lykke Li. The mezcal comes from the farm her grandfather bought in 1971. The agave is roasted for three to four days in an earthen oven, crushed by a tahona, fermented in wooden vats and distilled twice in copper pot stills, and the bottling team is made up of women.
Expect roasted agave, earth and citrus with a soft, gentle smoke.
It is a stylish, women-founded mezcal with a lighter smoke level than many.
