Cakebread Cellars Napa Valley Cabernet Sauvignon 2021 750ml

2021 was a drought year in Napa, with a small crop of concentrated grapes, and Cakebread's notes say this Napa Valley Cabernet will improve with cellaring.

The Rutherford family winery made it from estate ranches and grower vineyards across Napa. It's 88% Cabernet Sauvignon with Merlot, Petit Verdot, Cabernet Franc, Malbec and Syrah. The grapes were picked by hand at night and cold-soaked for two days, and each lot was fermented and aged separately for 17 months in French oak, 48% new. It's 14.4% alcohol.

The US marketer describes blackberry, dark plum and boysenberry with dark chocolate, baking spice and toasty oak, a full body, fresh acidity and finely knit tannins.

Buy the 2021 to cellar for a few years. For a Cakebread that's ready now, choose the 2018.

If you open it now, decant it for an hour. Serve it with steak or braised lamb.
