Caymus California Cabernet Sauvignon 2023 750ml

Caymus California Cabernet is not Napa wine. Chuck Wagner sources it from sites across the state, from Paso Robles to lesser-known corners of Lake, San Benito and Monterey Counties, and he introduced it with the 2021 vintage.

It's 100% Cabernet Sauvignon, made by the Wagner family at Caymus Vineyards with the same aim as their Napa wine: ripe fruit and soft, plush tannins. Some retailers list it as Napa Valley; the label and the winery both say California.

The style is supple, dark and rich, and Caymus says it drinks well on release or after a few years in the cellar.

The question most people ask is whether to buy this or the Caymus Napa Valley. The Napa bottle is the one for a gift or an anniversary. This one costs about $25 less and gives you the Caymus style for a regular dinner.

Open it half an hour before you pour and serve it just below room temperature. It takes a steak, a cheeseburger or barbecue ribs.
